My Foodie Girl Crush…

Sunday, September 26th, 2010

I have several girl crushes at the mo, but before I go any further, just so you know. I am not going to leave Big J or start eating lots of hummus ( for some strange reason, Big J thinks this is what Lesbian’s eat? .. (men?!) …Actually I do Love Hummus ;) ) So here before we start, is the meaning of ….

The Girl Crush :

( Taken  from the Urban Dictionary.com  -)

Feelings of admiration and adoration which a girl has for another girl, without wanting to shag said girl. a nonsexual attraction, usually based on veneration (meaning, profound respect or reverence)  at some level.

So that sorted, I can now show you my line up. First the Grande Dame, The One… The Only Nigella! *drum roll please*

This lady is wholly responsible for my love of cooking. The first series of Nigella Bites has been running over the weekend on the Food Network and I almost forgot how refreshingly brilliant she is. No nonsense gorgeous food delivered with that Upper Class Purrrr ..You have Just gotta love her, she leaves you no choice!   My favorite  of her books is Nigella Bites, Its now got no cover and several of the pages are stuck together with beaten egg and flour. But its still, probably my most used and lent out cook book.

Next is Giada De Laurentiis. Okay, so yes she is gorgeous. But this girl can cook! And her love for Italian Food is totally infectious!  Her show runs on the Food Network, and its fab!  As well as being a total babe she is somehow quite goofy, in a sexy way. Love That! ;)

Her recipes are super easy but effective, and they are all listed on the food network site, so whenever I fancy something Italian that’s where I go. My favorite recipe of all time of Giada’s is Chicken Cacciatore . The only thing I am unsure of  tho, is if she is actually human? As she really seems to love her food, but has THE most killer bod I have ever seen. Better than Scarlett johansson  any day ;) But even if she is from Mars, who cares…she makes food to make grown men weep.

Anyone who knows me, knows I have a bit of thing for Sophie Dahl. I know, its embarrassing. But I loved her cookery show, yes and I know lots of posh foodie types HATED it. But let me put my case….

One of her most scathing critics was food writer and fellow tv food show personality Giles Coren. He said of her on his Twitter account: ‘This Sophie Dahl show – what a crock of bogus, mendacious s**te. What a sickening sham. The BBC should be f***ing ashamed of itself.’

Well I am sorry Mr Coran, but I must disagree, yes she openly used her sexiness to sell her cooking antics ( just like someone else I could mention who’s name starts with Ni and ends in gella ;) ) But I love that! Cooking is sexy and fun and sensuous and primal I think. In one scene in the first episode, Miss Dahl said of buffalo mozzarella – ‘You can feel it slinking around in the bag – I actually sort of fantasise about this cheese’… That-a-girl ;)

And anyway, didn’t Giles have a show airing on BB2 at about the same time as Sophie ? As Mentioned in a daily Mail article “ The scenes of  Sophie  seductively toying with an olive on the end of a cocktail stick and licking her lips lasciviously after taking a deep sniff at a bottle of wine is a far cry from 40-year-old Mr Coren’s shows.”   hmm…sour grapes anyone!
I did feel a tad cheated that the spectacular shabby chic home  featured on the show is not really Sophie’s, but just hired for the show.  But hay, I doubt the lovely Blake Lively rocks up to any awards gig in her own clothes either…. I guess thats show biz!

And I can’t go without mentioning my gorgeous Twitter Pal @EnglishMum, its a bit embarrassing to say, and I hope me mentioning her here doesn’t mean she’ll never talk to me again, but va va voom Girl!

She is a total babe and her foodie blog was the first and pretty much the only one I read.  What she says about herself…

I’m a 40 year old time-wasting, talkative layabout, excessive Twitterer and arch procrastinator with a penchant for cooking, shopping, hot baths, Green & Black’s and a nice glass of red (not necessarily in that order).

My fav recipe of hers at the moment is her Teeny Weeny Chicken & Ham Pie,  as mentioned in one of her ingredients ” A Couple of slices of nice ham (not oddly wet plastic crap ham purleeese)”… lol,.. Never! ;)

Again…what’s not to love? Cheers Mrs XXxxx

P.S… @EnglishGrandma is lovely too.

Autumn…. its a new dawn, its a new day… Yeah Baby!!!

Tuesday, September 21st, 2010

So my favorite season is on its way!

I like summer… I really do, but by September first I am getting a little jaded by our muggy hot ( I can’t quite decide what i am doing) English weather and am to be honest, over it!

The idea of conkers and blackberry’s on every tree, the crunch of autumn  leaves underfoot and putting on a pair of your favorite boots for the first time, just … quite frankly makes me happy.

I also love the fact that I can put away all my summer clothes… bearing ones bod in swimsuits (guilt inducing torture) bearing ones slightly chipped nail polished feet in  flip flops (who ever says those things are comfy is SO lying, I got a rather lovely pair from Hobbs that I have to physically hold onto by curling my feet up with every step, gives me feet cramp!) and no more skimpy vest’s ( I  hate that kind of wobble bit of flesh between my arm pit and chest, you know the bit right near your bra strap..I know everybody has it unless your a malnourished teenager but i don’t like it, no no! ) Say goodbye, wave sweetly and good riddance to the lot, I am planing the great stuffing into the suitcase under my bed this weekend, maybe with a glass of something pink and fizzy just to mark the occasion!

The other thing I love about autumn is the food, blackberry and apple crumbles, sticky sausages with mash potato and soup!

any kind of soup really, but not from a tin, cant touch that stuff..makes me heave. But a homemade pot of something yummy bubbling on the hob for lunch time makes me feel all warm and fuzzy inside. Also, although I am banning the word diet from my house (it had to be done, me and teen Ellie were becoming miserable brain dead food a holics..nobody wants that) soup is a wonder food, according to many diet ( yes, I know I just said that word was banned ;)  ) and nutritionist experts say if you replace several main meals with soup through-out the week  that alone will aid you lose a few pounds. Even if you just  pureed your ordinary meal (not that you’d want to mind),  the calories would be less…not sure why..but there you go….the boffins say so… so I say bring on the soup!

I made this one up the other week and so many people have asked me for the recipe I thought I’d leave it  here, it also fits very nicely into my grub from around the world theme, as I had something very similar in L.A a few years back, and if its good enough for the sunshine state right! ;) ….

Fry off  1 big garlic clove in olive oil with 5 spring onions, 1 celery stick, 1 red pepper, 1 green pepper &  a big handful of cherry tomatoes, soften, then add 250ml stock, tin of toms, 1 sweet potatoes diced small, tin of kidney beans, good shake of chili flakes (depending on taste, i like quite alot) , 1 tsp of  cumin and  1 tsp of smoked paprika ( if you cant get smoked, you can use ordinary. But the smoked really adds something) .

Simmer for a good 40 Min’s until the cherry tomatoes have burst in the juices and the little bits of sweet potato is soft. I then mash a bit with a potato masher to create and chunky yet saucy soup. YUM!

To make the tortilla chips, get some flat tortillas ( I really like the wholemeal ones) , brush both sides lightly with olive oil, salt and pepper and paprika and bake in a hot over for a few Min’s until golden brown and crunchy. Then bring them out cut into triangles and sprinkle on the soup with a big dollop of sour cream or plain yogurt, some sliced spring onions and a sprinkle of extra smoked paprika…..So so good! and perfect for a (almost) guilt free  autumn treat!

Icklebabe’s BIG launch!!!

Monday, September 13th, 2010

Anyone who has been following Icklebabe’s progress will probably be aware of me banging on about my new web site launch for some time. About 9 months to be precise, sorry, might have been easier to have a baby….or maybe not! ;)  but anyway,  its finally here!  Whoop, whoop !!!

The site has been secretly up for a little while, with things being added everyday and I have been so very touched by your lovely feedback so far. Someone told me the other day that it reminded them of walking down the beach with a bag of sweets. Another said It’s like a little village boutique on her laptop screen. How fab is that! ? I really couldn’t wish for nicer words!

Big j has worked really hard coming up with the website design, trying to poke around inside my brain to see what I actually meant when I said I wanted something  quintessentially British, with a bit  of sea side shabby chic, and lots of candy coloured Cath Kidson inspired lovelness oh annnd ….*pretty* … easy eh?!

All the *pretty* things on the new site have been a work in progress really since the Milsta was born. Some of the things from the old icklebabe site have made it back on the new, like the ever popular new baby gift plates and the nursery canvases.

As well as lots and lots of new creations, vintage inspired tea cozies and aprons. Whimsical designer fabric Baby and kids tees. New painings, candles, bunting, Alice in wonderland cushions, cool grown up tees and even something very close to my heart, twitter inspired stuff!

If you are looking for something well made and unique, or you simply just want a nosey. Please come and visit…and tell your friends. I would really really appreciate it!

Oh and as this is our official Opening week, we better have an offer hadn’t we!?

So for the next week if you buy anything on the site I will send you a lovely £5.00 off voucher with your order , that way you can treat yourself to something from me for free! just a small thank you for supporting your friendly neighbourhood kitchen table craft queen ;)

And if you leave me a comment below telling me what your favorite icklebabe creation is, I will enter you into a draw to win a super duper special £20.oo gift voucher to spend on whatever you fancy from the site!

Everything you order from icklebabe, comes all wrapped up in raffia and tissue paper too so it makes a great gift. Brace yourself I am about to mention the “C” word…. because Christmas *is* coming you know ..wink ! XXXXXX

Oh P.S ..if you want a chance to win something totally free from icklebabe, pop by the lovely Beckicklesie’s site, she’s giving away my twitter mugs and other stuff! way-hay!!!

My Big Fat Greek….supper!

Sunday, September 12th, 2010

Well, its September already…. the schools are full of smart shinny shoed  looking kids again (at least for the first week of term anyway) And I can finally sit down with a nice cup of tea and write about my first love …FOOD!

I am sorry my foodie posts have been so thin on the ground of late, but my time keeping and life organizing skills  as usual in the school hols has gone completely to pot!

I have been reading about food though, I was hoping the “reading” about it would stop the “eating” it, kind of stupid! Once you’ve read em, you have to cook from them..and then you have to eat it…just wouldn’t be right no to! right?! …

Anyway,   I bought a box full of beautiful cook books by the amazingly talented Tessa Kiros (thank you to twitter pals for the tip off ;) Her books are really  like pieces of art, the photos are so beautiful and the text in between reads like a really great novel. Allot of her recipes and writing comes from her family history, but also from her travels. And she got me to thinking of all the fabulous foods I have tried in different far away places.

So in honor of Mrs Kiros and also to keep my own memories alive this months foodie blogs are dedicated to great travels and amazing food! I hope you’ll come along on the journey and if you’d like to add any of your own favourite foodie travels that would be great!

First stop is Kefalonia, Greece. Me and big j went without the kids a few years ago and it was literally love at first sight. We have been back several times and even though we’ve tried other places in between, nowhere comes close to its perfectness.

It not only looks like paradise but feels strangely like home. I love it so much that one day that’s where I want to be. Riding around the  sun drenched island in a bikini on a banged up old scooter. Stopping every once in a while to dip into the crystal blue sea. (I will obvs be the size of a stick insect as I will live on fresh fruit and Greek honey, so therefor will look fabulous in said bikini ;) ) Ahh..bliss..I know life isn’t really like that is it? ..but maybe, just maybe it could be! ( ever the dreamer;))

So anyway, here are two of the most famous things I tried and loved in Greece.  Both fairly easy to rustle up, if a little time consuming. But if on a lazy Saturday afternoon you fancy having a potter around the kitchen and making something really special I highly recommend it! The main dish freezes really well too, so if your an organised type (unlike myself) you could bung some in the freezer too!

First course, Moussaka! This one’s based on a Gorden Ramsey one but with a few changes from me. Most noticeably is the lack of minced lamb, but if you want to add it back just fry it at the beginning with the onion and garlic. Have got to say though this veggie version is really worth a go.

Veggie Moussaka

  • 3-4 tbs olive oil, plus extra for brushing
  • 3 large onions
  • 4 garlic cloves, chopped up finely
  • 200ml of red wine or vegetable stock
  • 5 tbsp of tomato puree
  • 2 x 400g tins of chopped plum tomatoes
  • 2 cinnamon sticks
  • 1/2 a teaspoon of all spice
  • 1 tee-spoon of oregano
  • 2 large-ish aubergine
  • 250g of cooked lentils, I like the really tiny green ones

For the cheese sauce

  • 75g of butter
  • 75g of plain flour
  • 600ml of whole milk
  • 150g of grated cheddar cheese (not authentic I know, but really adds to the flavour)
  • 1 large egg beaten

Heat the oil in a large pan and add the onions and garlic until soft and lightly brown. Pour in the wine or stock and let it bubble until almost evaporated. Then add the tomato puree, toms, cinnamon, allspice and oregano. Add the little lentils and simmer for a good half an hour.

In the mean time, slice the aubergines into slices around 1.3 cms thick. Brush them well with good olive oil and sprinkle them with sea salt and pepper. Place them in a frying pan over a high heat and brown on both sides. You will need to this in little batches.

Preheat the oven to 220′oc or gas make 6. And start making the sauce. Melt the butter in the pan and add the flour, Cook off for a few mins. Lower the heat slightly and whisk in the milk. Very slowly, a little bit at a time. Allow it to simmer gently for around 10 mins then stir in three quarters of the cheese and add some seasoning. remove from heat, and when cooled slightly add the beaten egg to make a silky sauce.

Now all you need to do is arrange it all and cook! Just place  a layer of aubergines on the base of your dish, and add a layer of the tomato sauce. Then spoon over a half the cheese sauce. And then repeat until you end up with a layer of cheese sauce on top.Bake for around 40mins until golden brown and bubbling, then wait five min’s  and serve.

Time for pudding!

Baklava with Nuts & Dried Apricots

Syrup

  • 80g sugar
  • 2 tablespoons of runny honey
  • 1/2 teaspoon of ground cinnamon
  • 3 cloves
  • juice of half a lemon

  • 6 sheets of filo pastry
  • 150g of butter, melted
  • 125g of really good dried apricots (sainsbury’s taste the difference ones are yum)
  • 40g whole almonds, roughly chopped
  • 40g unsalted pistachio nuts (skinned ones) roughly chopped
  • 1 egg white
  • 30g caster sugar
  • a few drops of vanilla essence

First make the syrup, add all the ingredients to a pan along with 185ml of water. Bring to boil for about five min’s until its thickened slightly. Leave to cool completely.

Preheat the oven to 180′oc gas mark 4. Lay out a sheet of filo on a work surface and brush generously with melted butter. Repeat with another 2 sheets of filo and brushed melted butter, brushing the top with butter. Cut the filo lengthways so you have 4 equal strips. Repeat the whole process with the remaining filo sheets until you have 8 strips in total.

Put the apricots and nuts into a food processor and blitz to moist rough paste. Whip the egg whites to soft peaks, then add the sugar and vanilla. Continue whisking (even if your arm hurts;) until stiff and creamy.

Now the fun part!…Take a tablespoon of the apricot nutty mixture and press onto one half of the strip then put a teaspoon a egg white on top. Then fold the bottom half of the pastry over the filling. turn in both sides, pressing down all the way up the length. Then roll up to make a neat package and seal in the filling. Repeat with all eight pieces (they don’t have to be perfect). Place on a baking sheet lined with greased parchment paper and brush liberally with remaining butter. Cook in oven for about 20 mins or until golden brown. Cut each one into 3 or 4 with a sharp knife, arrange on a plate and pour the syrup liberally over them, adorn with a few jewel green pistachios… serve warm with ice cream, or how I like them best, cold from the fridge with a hot sweet coffee. So So GOOD!

This Recipe is from Falling Cloudberries by Tessa Kiros, thank mrs! ;)
