Let them eat cake!

Today’s post is cake!

OK….. at first glance not terribly diet concious but after nearly 2 weeks of cake wilderness I had to make some.

The kids helped and we all had a great time.

Warning though, these cakes are only diet if you limit yourself to 1, but when they are hot out of the oven smothered with warm honey its tough…I stopped at 2! quite commendable I think  ;D x

cakeCarrot and Poppy Seed Cakes with Honey Glaze

4oz of self raising flour

40z of soft butter or marg

40z caster sugar

2 eggs

1 tsp of vanilla essence

handful of raisins

a small handful of poppy seeds

2 tablespoons of honey

1 large 0r 2 small carrots (grated)

The small facts :

cals per serving 120, about 10p a cake

Makes 12 cakes approx.

Method-

Pre-heat the oven at 190 0c.

Beat together the butter and the sugar, add the eggs and vanilla essence , then flour, poppy seeds, raisins and grated carrot.

Mix it up.

Spoon into cake cases and cook for around 20 mins.

When they are out of the oven put them on a cooling rack and put the honey in a pan to warm, poke small holes in the cakes with a skewer or cocktail stick and spoon  in the warm honey as a glaze…. oh now try not to eat all 12 at once!

    Can I use golden syrup instead of honey (cos the bee stuff makes me feel really ill when I smell it) ?

    Although I have no golden syrup and don’t want to wait till i can get to Milan to buy some.

    I think I have some of that black treacle stuff somewhere, if that will do ?

      Hi Sarah, lol on the honey, kinda know what u mean come to think of it, golden syrup would be yum, and who knows about the black treacle, give it a go, being frugal must be about using what you already have, right? ;D xxx

  2. That’s so funny. I have a very strong urge to bake cupcakes these days – the ingredients have been bought already and are only waiting for the fairy hand to mash them together and turn them into little delights.
