
the best dish!
This is what i made for dinner last night, it was so yummy i had to let you into the secret…
It all started early in the morning, as usual me and milly were watching the good food chanel ( the only thing worth watching at 5 in the morning!) and up pops Jamie Oliver and this amazing pinapple curry, as soon as i saw it i had to make, it so later on in the day i hit the tinternet on the search for the recipe.
Searched the good food channel…na,
Tried Jamie’s own site…. na, ..jamie your site is just covered in adverts for your products, love you , don’t love your merchandise!
Google serch…. na..na..na… no luck , so i just searched for pineapple curry and i found this amazing recipe from a lovely lady in America I can’t say I wanted to make it sraight away, the ingredient list of bbq sauce and cocnut milk and curry did’nt sound like a good mix but reading her words inspired me to cook it!
She wrote….
Curry Rub
2 tablespoons curry powder
2 teaspoons salt
1 teaspoon of cumin
1 teaspoon of termeric
small pinch of chilli powder
Coconut Lime Sauce
1/2 mug coconut milk
1 teaspoon Curry Rub
Juice from one-half fresh lime
Honey Barbecue Sauce
2 table spoons barbecue sauce
1 and a half tablespoons of honey
Ingredients
4 boneless, skinless chicken breast halves (4 to 6 oz each)
1 medium red onion, sliced 1/4 inch thick
1 tablespoon vegetable oil
Small tin of pineapple rings
1 pack of fresh mini corn
METHOD-
Toss the chicken strips in the curry rub, keeping 1 teaspoon of it by for later…
Add chicken to the pan and cook for a couple of mins in a griddle pan (would work in non stick pan too
make up the bbq and honey sauce and brush on the chicken, when chicken starting to brown add the sliced red onion, pineapple and whole corn and brush everything again with the bbq sauce. Cook everything until the chicken is cooked and the veg is caramelised.
Lastly make up the sauce and warm it through. Serve the chicken with cocnut rice and the caramelised veg and a drizzle of the lime coconut sauce, YUM!
PS, The cocnut rice is easy to cook…
Start with about 360g of rice in a boiling pan of 1 and half small mugs of water, 1 teaspoon of sugar a good pinch of salt and a tin of coconut milk, bring to boil and smimmer gently with a lid on for about 20mins, after that the rice should be sticky and creamy and yummy. Serves a very hungry 4 -6 peps x
